Kenya was a mispronounced Kinyaa Kikamba word meaning 'mountain covered by snow'. 'Ki'denotes 'kiima'=mountain. 'Nyaa'means white snow.

Hence American, Jamaican, Cuban,Indian etc. About For China&Brazil I think it's about phonetics. For those ending in consonant 'L','N'or French dominated, they went with 'ee' or 'ese'. Etc, Senegalese ,Nepalese, Portuguese, Rwandese,Japanese etc.
