Bookkeeping Cafeteria

I started a small cafeteria mtaani. would like to know what kind of records to keep so as to know my performance either weekly, monthly Think etc
selling mandazi, chapatti,chai samosaz etc.

Probably the basics, like the journal and the ledgers. Also a simplistec balance sheet of assets, liabilities and own equity.

Thanks TB ...What if i use the simple bookeeping of income and expenditure as advised by a friend.i just record my daily income and my daily expenses.. will this work without going in to the headache of ledgers and balance sheets?

You can begin with basic book keeping how much you spent how much you got .Have a receipt book to help keep track of all your sales.

Also there is a very important aspect you need to keep tabs on called Cash flow. Or else you will just be receiving money (from sales) and paying out money (in expenses, purchasing stocks, texes, etc) over and over but not really sure whether you're really making money or going round in circles.
